Esquites
/It only felt appropriate for the first recipe on this blog to be something that I truly love and make for my family regularly. Although we eat this dish year round, during the summer we eat it easily once a week.... if not more! I cannot get enough of it!
Esquites is a Mexican corn dish commonly found at fairs or from street vendors. It is a derivative of Elotes which is grilled corn on the cob with mayonnaise, cilantro, cheese and chili powder only Esquites is so much better because you get all of those wonderful flavors without the messiness of eating corn on the cob covered in toppings! This is a great dish for a crowd as it can easily be doubled or even tripled! You can even make it ahead of time and put it in the oven later when you need it and then finish it off with the cotija and cilantro.
